Pan-Seared Pork Chops with Savory Blueberry Balsamic Sauce

Ingredients
  

  • For the pork chops
  • 2-3 Bone-in Center Cut Pork Chops
  • Salt and pepper to taste
  • Paprika
  • Onion powder
  • Olive oil for the pan
  • Butter
  • Fresh rosemary 1 sprig
  • For the blueberry sauce
  • 1 cup fresh blueberries
  • 2 cloves garlic minced
  • 1 large shallot minced
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • Pat pork chops dry with a paper towel. Season generously on all sides with salt, pepper, paprika and onion powder.
  • Heat a drizzle of olive oil in a skillet over medium-high heat. Once hot, add the pork chops and sear for 5-8 minutes per side, until a deep gold crust forms. Briefly sear the fat cap to render and crisp.
  • Add butter and rosemary to the pan. Tilt the skillet and baste the pork chops with the melted butter for about 2-3 minutes.
  • In the same pan, add the shallots and garlic. Sauté until softened and fragrant. Add blueberries, salt, pepper, honey and balsamic vinegar. Reduce heat to low and simmer for a few minutes until the berries begin to burst. Lightly mash some of the blueberries with a fork for a thicker texture, leaving some whole for a fresh pop.
  • Spoon the warm blueberry sauce over the pork chops and serve immediately.

Among our service projects, we assist AFAC in bagging food supplies every second Wednesday, collect children’s books to be given gratis each child visiting the Arlington Pediatric Clinic, read to elementary students at Aspire! After-School Learning and to Randolph Elementary School children on Dr. Seuss’ birthday, assist Salvation Army ring bells for their red kettle Christmas campaign and participate in iCanShine bike program in the summer helping kids with disabilities to learn how to ride a bike. 

We support and chaperone the Key Club officers attending the state or district convention where they network with peers who will become future civic leaders.

In the last five years, we have become known for our annual blueberry sales, our biggest fundraiser. Some other  examples are Arlington Thrive, PRS Crisis Link, Stop Child Abuse Now (SCAN), Aspire! After School Learning, Arlington YMCA, Arlington 4-H, Girls on the Run, Arlington Food Assistance Center (AFAC), National Capital Treatment & Recovery, and many others.

We support athletic clubs with soccer balls and fund high school senior graduation night, give scholarships to worthy rising college freshman and fund grants to high school mothers trying to finish their education while parenting, sometimes solo, in the Terrific Parent program.
